Makes 8 skewers
Prep Time: 15 minutes
Cook Time: 7 minutes (approx.)
Cut summer squash in half lengthwise and cut into 1/2 inch slices.
Rinse scallops and pat dry with paper towels
Thread scallops, tomatoes and squash pieces onto 8 skewers
Place on hot grill and cook for 5 to 8 minutes or until scallops turn opaque, turning once and brushing frequently with stir-fry sauce
